I’ve always loved the comforting, sweet flavours of apple and cinnamon even when I was growing up, especially when combined with the nuttiness of almonds. I wanted to create something with Natvia natural sweetener which reminded me of my childhood, while using clean eating ingredients to make it an ‘indulging innocently’ treat, so what better way than a traybake? This is a bit of an unusual and accidental recipe but the result is delicious…hard to believe it’s guilt-free, just don’t eat the whole thing in one go!
Ingredients:
Base:
- 1 cup coconut flour
- 25g ground almonds
- 1 tsp baking powder
- ½ tsp ground cinnamon
- Few drops of almond essence
- ¼ cup coconut oil, melted
- ½ cup almond milk
- 2-3 tbsp Natvia
- 1 egg, beaten
Filling:
- 1 ½ cans of pure apple slices (cooked, no added syrup)
- 2 tbsp Natvia
- ½ tsp ground cinnamon
- 1 tbsp cornflour
Topping:
- 2 egg whites
- 50g ground/flaked almonds
- 2 tbsp Natvia
- Few walnuts, to decorate
Get baking!
1) Begin by greasing a baking dish or tray and preheating the oven to 190 degrees C.
2) Mix together the base ingredients well to form a soft dough – not too crumbly or sticky. Press the mixture into the tray so it covers the bottom. Bake for 10 minutes.
3) Mix together the filling ingredients, then spread over the base, return to the oven for a further 10 minutes.
4) Whisk together topping ingredients, pour over the apples and bake for a final 5-10 minutes until golden and cooked through. Remove from oven and leave to cool, before slicing up and indulging!
