If you love brownies, you’re sure to love the addition of pureed pumpkin in these marble-effect gooey, delicious chocolatey slices packed full of goodness thanks to Creative Nature’s maca powder. I didn’t add an icing or topping as I thought the slices were pretty and rich enough without, but they’d be great served with a dollop of natural yogurt mixed with vanilla to make a dessert!
Ingredients:
Brownie –
- 1 cup coconut flour
- ½ cup cocoa powder
- ½ cup Creative Nature maca power
- 1 tsp baking powder
- 3 tbsp stevia
- 1 tbsp coconut oil, melted
- 1 cup almond milk
- 1 cup cooked and mashed pumpkin
- ½ cup fat-free yogurt
- 1 tsp vanilla extract
Pumpkin swirl –
- 1 cup cooked and mashed pumpkin
- 2 tbsp Quark
- 1 egg
- 1 tsp cinnamon
- 1 tbsp agave syrup
1) Preheat oven to 190 degrees C, grease a cake or square tin.
2) Make the brownie – mix the dry ingredients in a bowl, in a separate bowl combine the wet ingredients then add to the dry (you may need to add more milk to make a soft, slightly pouring consistency).
3) Next mix together all of the pumpkin swirl ingredients together separately, then add alternative spoonfuls of both mixtures into the tin. When all used up, use a knife or spoon to swirl the two together to create a marble effect.
4) Bake for about 20 minutes until golden and a skewer comes out clean. leave to cool, slice up then enjoy!
