To celebrate the launch of the brand-spanking new Kaizen Living website (check it out over here, go on!), I thought I’d share a special recipe with you!
These delicious and pretty-looking bites comprise of natural, vegan-friendly layers incorporating Kaizen Living superfoods, acai berry powder and chia seeds. Packed with healthy fats, goodness and natural ingredients, make these in advance so you’ve got them when you want a sweet but guilt-free treat, or need a last minute dessert.
Ingredients:
For the base –
- 1 cup stoned dates
- 1 ½ cups walnuts
- 1 tbsp Sweet Freedom, agave syrup or coconut nectar
For the acai berry layer –
- 1 cup cashew nuts, soaked for a few hours
- ½ can coconut milk
- 2 tbsp Kaizen Living acai berry powder
- 100g frozen raspberries
- 2 tbsp Sweet Freedom, agave syrup or coconut nectar
- ¼ cup coconut oil, melted (I used Lucy Bee)
For the coconut layer –
- 1 cup cashew nuts, soaked for a few hours
- ½ can coconut milk
- ¼ cup coconut oil, melted
- ½ cup dessicated coconut (unsweetened)
- 2 tbsp Sweet Freedom, agave syrup or coconut nectar
- 2 tbsp Kaizen Living chia seeds
Get making!
- First of all line a baking tin with greaseproof paper so it covers the base.
- Make your base: put all of the ingredients into a food processor or powerful blender and blitz well until you have a combined, sticky mixture. Scrape out and spread over the base of the tin, making sure it’s all covered. Chill in the fridge.
- Now make your berry layer. Drain the soaked cashews and put everything in a high power blender or food processor and blitz until you have a smooth, pink mixture. Spread this over the base evenly, then place in the freezer for about 2 hours.
- Finally, make the coconut topping. Again, drain the cashews and throw everything in and blitz well until you have a thick coconut ‘cream’. Remove the baking tin from the freezer (make sure the berry layer is set so you don’t smudge together!) and spread this over evenly. Return to the freezer for at least 2 hours.
Ready to serve? Remove the tin from the freezer about 10 minutes beforehand and cut into about 20 squares – this will depend on how large your tin is but you only want little chunks as these treats are quite rich, although still healthy!
