This post is dedicated to some of my favourite things: flavours of autumn (in this case, apples in the form of Nim’s air-dried apple crisps plus mixed spices), caramel and new healthy baking mix on the block, Thrively. I’ve got a lot of love for for both of these brands, not only because of their delicious and nutritious products but because the people behind them are just so god-dam lovely.
Raspberry & Almond Brownies
I’ll start off by showing you what I did with the Chocolate Maca Muffins mix, one of Thrively’s three gluten-free, dairy-free and no refined sugar offerings. Although I bake a lot as part of my job and blogging work, it was nice to have the luxury of using this incredibly easy mix boosted with superfoods – you only need to add eggs, melted coconut oil and your choice of milk… Then it’s up to you how you customise the mix!
I added some raspberries and almond extract into the mixture and scattered over some flaked almonds to create some brownies. The verdict: incredible. Rich, indulgent and fudgey brownies with just the right amount of sweetness and the ideal texture – not dry or crumbly in the slightest.
Spiced Apple & Caramel Cake
With the Baobab Muffins, I decided to go a bit more extravagant and bake the mixture (with added cinnamon, ginger and grated apple) between two small cake tins and create a super easy caramel to sandwich them together and spread on top. Here’s how I made it:
- 1 x jar St Dalfour Chestnut Spread (or unsweetened chestnut puree)
- 3 tablespoons tahini
- 1 teaspoon vanilla extract
- 2 tablespoons date nectar (I used Beloved)
Simply mix the ingredients together and chill in the fridge until needed. I decorated the top cake with Nim’s Apple Crisps – crispy, naturally sweet and a perfect topping – plus some flaked almonds for the finishing touch. Let me just share some more photos so you can appreciate how it turned out…
Oh my, just like the other mix, Thrively totally smashed it again by getting the taste, texture and sweetness absolutely bang-on.
