A warming bowl of curry is a perfect dish to enjoy for lunch or dinner, especially when it’s brimming with spice and flavour. I’ve only recently got into cooking up my own veggie curries – throwing in whatever veg I’ve got in the fridge along with a selection of herbs and spices, adding some kind of pulses or beans and serving with rice for a complete meal.
This recipe is enhanced with Mr Fitzpatrick’s Lime & Lemongrass cordial which helps to deepen the aromas of the basic recipe. Packed with sweet potato and aubergine chunks and robust chickpeas, this easy dish is great to cook ahead to let everything soak up the flavours!
