The best kind of cookies that are chocolate and include more chocolate!! Plant based, gluten and dairy-free, they are delicious and perfect for any time of day when you are craving something (kind of) healthy!
Ingredients:
- 100g gluten-free flour
- 150g oat flour
- 3 tablespoons cocoa powder
- 100g sweetener
- 1 teaspoon baking powder
- 2 tablespoons flaxseed + 2 tablespoons water
- 3 tablespoons oat milk
- 2 tablespoons peanut butter
- 1 teaspoon vanilla extract
- 70g mixed dairy-free giant chocolate buttons
Make them!
- Mix together the flours, cocoa powder, sweetener and baking powder in a bowl.
- Whisk together the flaxseed and water and set aside for 5 minutes. Then pour into the bowl along with the milk, nut butter and vanilla extract and mix well to form a soft dough. Add in the chocolate buttons.
- Spoon 9 pieces on a greaseproof baking tray then press down gently to form cookie shapes.
- Bake at 180C for 12-15 minutes until golden. Leave to cool on the tray, then enjoy!
