Make-ahead breakfasts that you can grab and go from the fridge are the best kind. Especially when the base for this indulgent but easy recipe includes all the good stuff like oats, nuts and seeds, dried fruits and chia seeds. Then there’s the rich coconut element to make it that bit more special, thanks to using Nature’s Charm coconut products [paid ad], particularly the whipping cream used for the topping. You can mix up whicever dried fruits or nuts you may have, plus if you don’t have fresh figs to hand, other fruits like apples, peaches or berries would work perfectly too.
Ingredients:
For the bircher muesli –
- 120g oats
- 2 tablespoons pumpkin seeds
- 2 tablespoons chopped mixed nuts
- 4 tablespoons raisins, dried apple and chopped dates
- 2 tablespoons chia seeds
- 2 tablespoons sweetener
- 2 tablespoons coconut yogurt
- 300ml coconut milk
For the topping –
- 1 x can Nature’s Charm coconut whipping cream, chilled in the fridge overnight beforehand
- 2 tablespoons sweetener
For the figs –
- 4 figs, halved vertically
- 2 tablespoons maple syrup
- Granola
Make them!
- Mix together the bircher muesli ingredients well, then divide between 2 large/4 small glass dishes and chill in the fridge overnight.
- Meanwhile whip up the coconut cream and sweetener until thick then either leave in the fridge or once the bircher has set overnight, spoon a generous amount of the coconut cream on top of each.
- Place the figs and maple syrup in an airfryer and bake at 190C for 4 minutes, or in the oven on a lined baking tray for 8 minutes until softened.
- Once cooled, add the fig halves on top then sprinkle over granola. Enjoy!
