Sometimes you can’t beat the taste (and smell when it’s baking!) of your own granola! I adore this combination of sweet mango, rich dark chocolate, creamy coconut and a hint of spiced ginger and it works so well as a granola recipe. Made for The Coconut Company [paid recipe], the additional hint of coconut from the oil, sugar and nectar gives this simple but delicious recipe even more of a flavour boost!
Ingredients:
- 300g oats
- 30g desiccated coconut
- 1 teaspoon ginger
- 3 tablespoons The Coconut Company coconut oil
- 3 tablespoons The Coconut Company coconut nectar
- 3 tablespoons The Coconut Company coconut sugar
- 2 tablespoons nut butter
- 3 tablespoons dried mango, chopped
- 70g dark chocolate, chopped
Make it!
- Mix together the oats, coconut and ginger in a bowl.
- Melt the oil, nectar, sugar and nut butter, then pour into the bowl and mix to combine.
- Spread out onto a greased and lined large shallow baking tray. Bake at 170C for 15 minutes, then stir well.
- Add in the dried mango and chocolate chunks then bake for a further 10 minutes until golden. Allow to cool then stir and break up with a spoon.
- Keep in an airtight container for up to 3 weeks. Serve with yogurt, milk or anything else you fancy!
