Who doesn’t like the sound of white chocolate chip cookies, studded with strawberries, then sandwiched with a thick coconut whipped cream…yum! If you’re looking for a delicious dairy-free / vegan alternative to double or whipped cream, then Nature’s Charm coconut whipping cream is exactly what you need – and works so well in this [paid] recipe.
Ingredients:
For the cookies –
- 100g margarine
- 50g sweetener
- 50g coconut sugar
- 1 teaspoon vanilla extract
- 1 egg, beaten
- 180g gluten-free flour
- 70g white chocolate chips (can be dairy-free)
- 70g fresh strawberries, chopped
For the filling –
- ½ can Nature’s Charm coconut whipping cream
- 3 tablespoons sweetener
- Dash of vanilla or almond extract
Make them!
- Melt the margarine or coconut oil and add to a bowl with the sweetener and coconut sugar and whisk well.
- Add in the vanilla and egg and mix again. Fold in the flour then add in the chocolate chips and strawberries last, being careful not to over mix.
- Use a spoon or scoop to add portions of the mixture onto a greased and lined baking tray, then press down to flatten.
- Bake for 10-12 minutes until golden, then leave to cool and firm up.
- Meanwhile whisk the whipping cream with the sweetener and vanilla or almond extract until thick and smooth. Chill in the fridge until needed.
- Once the cookies have cooled, spread a little coconut cream in the middle and top with another cookie. Enjoy!
