Here’s a really simple and easy to make recipe that is just perfect for autumn, served while still hot with some creamy custard (vegan if you need it!). Mixed berries topped with a coconut infused, gluten-free and plant based sponge topping sprinkled with crunchy flaked almonds, it’s Nature’s Charm’s coconut condensed milk that really brings this recipe to life [paid recipe].

Ingredients:

  • 200g mixed berries
  • 1 tablespoon cornflour
  • 2 tablespoons sweetener

For the sponge topping –

  • 150g gluten-free flour
  • 60g sweetener
  • 2 tablespoons Nature’s Charm condensed milk
  • 120ml oat milk
  • 1 teaspoon vanilla extract 
  • 3 tablespoons flaked almonds

Make it!

  1. Mix together the berries, cornflour and sweetener and tip into a deep oven-proof dish.
  2. Next mix together the flour, sweetener, condensed milk, oat milk and vanilla to form a batter. Spoon the mixture over the top to cover and spread out evenly. Sprinkle over the almonds.
  3. Bake at 180C for 25 minutes (cover with tin foil halfway) until spongy and golden. Leave to cool a little and enjoy hot or cold.
