Oh I just know you are going to LOVE these seasonal treats absolutely bursting with autumnal flavours! I mean, what screams this time of year more than apples teamed up with cinnamon and ginger, with a hint of caramel…? These high protein, chickpea and oat-based cookies are packed full of fibre but it’s about how blummin’ good they taste (and look). Thanks to Nature’s Charm’s wonderful products used in this recipe [paid ad], be sure to add these to your snacking / treat staples.
Ingredients:
- 1 x can chickpeas, rinsed and drained
- 100g oats
- 2 tablespoons Nature’s Charm no added sugar condensed sweetened milk
- 2 tablespoons nut butter
- 4 tablespoons sweetener
- 2 tablespoons oat milk
- 1 teaspoon cinnamon
- ½ teaspoon ginger
- 1 teaspoon vanilla extract
For the spiced apples –
- 1 teaspoon coconut oil
- 1 teaspoon coconut sugar or nectar
- 1 apple, chopped
- ½ teaspoon cinnamon
For the drizzle –
- 2 tablespoons Nature’s Charm no added sugar condensed sweetened milk
- 1 teaspoon nut butter
- Pinch of cinnamon
Make them!
- Blend the chickpeas, oats, condensed milk, nut butter, sweetener, oat milk, cinnamon, ginger and vanilla until thick and mostly smooth.
- Divide into 8 balls then flatten with your hand onto a greased and lined baking tray. Push the edges up a bit around the sides. Bake at 180C for 12-15 minutes until golden. Set aside to cool.
- Meanwhile, heat the coconut oil, nectar/sugar, apple and cinnamon in a pan and cook on a medium heat for 5-8 minutes until softened.
- Spoon some of the apple mixture into each cookie to fill. Mix the condensed milk, nut butter and cinnamon and drizzle over each cookie and sprinkle over flaked almonds. Enjoy!
