Check out these for a super easy, no bake but cute and effective festive treat! A take on a rocky road combining some dried fruit, seeds and nuts coated in dark chocolate and in the shape of a donut, a little icing and Christmassy sprinkles makes these a great recipe the kids can get involved with too!
Ingredients:
- 2 tablespoons coconut oil
- 100g dark chocolate
- 40g oats
- 30g rice crispies
- 40g raisins
- 30g flaked almonds
- 30g pumpkin seeds
For the decoration –
- 2-3 tablespoons icing sugar
- Festive sprinkles
Make them!
- Melt the coconut oil and chocolate.
- Mix together the oats, rice crispies, raisins, almonds and pumpkin seeds in a bowl then pour in the melted chocolate and mix to combine.
- Divide the mixture between a 6-hole silicone donut tin and fill each one to the top. Chill for at least 2 hours until set.
- Once set, pop out onto a wire rack. Mix together the icing sugar with a dash of water – thick but runny enough to drizzle.
- Drizzle over each one and add some festive sprinkles on top. Chill in the fridge for a further 30 minutes then enjoy!
