Check out these for a super easy, no bake but cute and effective festive treat! A take on a rocky road combining some dried fruit, seeds and nuts coated in dark chocolate and in the shape of a donut, a little icing and Christmassy sprinkles makes these a great recipe the kids can get involved with too!

Ingredients:

  • 2 tablespoons coconut oil
  • 100g dark chocolate
  • 40g oats
  • 30g rice crispies
  • 40g raisins
  • 30g flaked almonds
  • 30g pumpkin seeds

For the decoration – 

  • 2-3 tablespoons icing sugar
  • Festive sprinkles 

Make them!

  1. Melt the coconut oil and chocolate.
  2. Mix together the oats, rice crispies, raisins, almonds and pumpkin seeds in a bowl then pour in the melted chocolate and mix to combine.
  3. Divide the mixture between a 6-hole silicone donut tin and fill each one to the top. Chill for at least 2 hours until set.
  4. Once set, pop out onto a wire rack. Mix together the icing sugar with a dash of water – thick but runny enough to drizzle. 
  5. Drizzle over each one and add some festive sprinkles on top. Chill in the fridge for a further 30 minutes then enjoy!
