I don’t know about you but I BLOODY LOVE breakfast. It’s my favourite meal of the day, maybe because I always start the day with a workout so by the time I’ve finished, I’m STARVING.
A fantastic way to get you ready for the day and an opportunity to cram in a load of nutrients and goodness to kickstart your brain and body, I thought I’d pull together 12 of my favourite breakfast snaps from my Instagram account which many of you have liked. Some are vegan friendly and dairy-free, some you can make the night before, but all are healthy, super easy to make and serve one person. Here goes!
Super Green Chia Seed Pudding
Make the night before – and grab from the fridge in the morning! You’ll need:
- 3 tablespoons Mornflake jumbo gluten-free oats
- 3 tablespoons Kaizen Living chia seeds
- 1 teaspoon Absolute Spice spinach powder
- 2 tablespoons TRKG vanilla Skinny Syrup
- 1 cup The Coconut Company coconut milk
Stir well and keep in the fridge overnight. In the morning add your toppings – I went for strawberries, drizzled with my favourite Sweet Freedom Choc Shot and sprinkled with bee pollen.
Raspberry Zoats
Ready in 10 minutes then either eat hot (or make the day before and chill in the fridge). You’ll need:
- 1/2 cup Quaker Oats UK oats
- 1 cup water + The Coconut Company coconut milk
- 1/2 grated courgette
- Dash of vanilla extract
- 1/2 mashed banana
- Large handful of frozen raspberries
Cook the oats in the water and coconut milk for a few minutes, then stir in the grated courgette and vanilla and continue cooking and stirring for 8 minutes. Remove from the heat, add the mashed banana and raspberries. Pour into a bowl and top with pumpkin seeds, bee pollen and some dried rose petals.
Coconut Quinoa & Chia Seed Breakfast Bowl
Make the night before – a great way of using up leftover quinoa. You’ll need:
- 1/2 cup cooked quinoa
- 2 tablespoons Kaizen Living chia seeds
- 1 tablespoon unsweetened desiccated coconut
- 1 cup The Coconut Company coconut milk (powder dissolved in water)
- 1/2 teaspoon vanilla extract
- 1 teaspoon coconut sugar
Leave in the fridge overnight. In the morning top with some berries, coconut chips, dried mango and dried rose petals.
Blueberry & Mango Overnight Oats
The night before, mix together everything and keep in a kilner jar or airtight container in the fridge. You’ll need:
- 4 tablespoon Mornflake oats
- 2 tablespoons Kaizen Living chia seeds
- 1 teaspoon Absolute Spice beetroot powder
- 1 teaspoon Kaizen Living acai berry powder
- 1 cup Alpro almond milk
- 1 tablespoon Cherry Active blueberry concentrate
- 1/2 teaspoon vanilla extract
- Pinch of ginger
In the morning top with dried mango (unsweetened), bee pollen and some coconut chips.
Lemon & Poppy Seed Porridge
You can enjoy this hot straight after cooking (if you really want some warming comfort food! We’ve not had the best ‘summer’ weather so far have we?!) or allow it to cool and keep in the fridge overnight so it’s ready to grab in the morning. You’ll need:
- 1/2 cup Mornflake gluten-free oats
- 1 cup The Coconut Company coconut milk (dried powder mixed with water)
- Zest and juice of 1 lemon
- 1 scoop PhD Woman vanilla protein powder
- 1 teaspoon vanilla extract
- 1 teaspoon Truvia stevia
Cook on a medium heat in a small pan for 5 minutes, then remove from the heat and stir in the poppy seeds. Top with berries, Arctic Berries freeze-dried blueberry powder and bee pollen.
Smoothie Chia Seed Bowl
Make up a smoothie the night before, mix everything together then keep in the fridge. You’ll need:
- 1 frozen banana
- Large handful of spinach
- 1/2 cup frozen mango
- 2 tablespoons Cherry Active Blueberry Concentrate
- 2 tablespoons Coyo coconut yogurt
- 1/2 cup water
- 2 tablespoons Kaizen Living chia seeds
Whizz up the first six ingredients in a blender (I use my Nutri Ninja), then stir in the chia seeds. The next morning, tip into a bowl and top with a mini sliced peach, buckwheat groats, bee pollen, Arctic Berries cranberry powder and Punch Foods Coconut Brownie superseeds.
Frill Acai Smoothie Bowl
Something I whizzed up especially for Frill Frozen Smoothie healthy ice cream! You’ll need:
- 1/2 pot of Frill Bursting Berries
- Large handful of spinach
- 1/2 frozen banana
- 1 teaspoon Kaizen Living Acai Berry Powder
- 1-2 tablespoons coconut water
Simply whizz up in a blender (I use my Nutri Ninja) until thick and smooth, then pour into a bowl. Now go crazy with toppings! I sprinkled over Kaizen Living chia seeds and cacao nib, bee pollen, buckwheat groats and dried rose petals to make it look extra pretty, of course!
Minty Mango Smoothie Bowl
Whizzed up and ready in 5 minutes! You’ll need:
- 1 frozen banana
- 1/2 cup mango
- Juice of 1 lime
- Handful of spinach leaves
- A few fresh mint leaves
- 100ml Vita Coco coconut water
- 1 tbsp Linwoods flaxseeds
- 1 teaspoon wheatgrass powder
I blended this in my Nutri Ninja blender until thick and smooth, then poured into a bowl and topped with blueberries, pomegranate seeds and my favourite Rolla Granola Hot Raspberry granola – perfection!
Spiced Apple Bircher Muesli
Prep the night before so it’s all ready to grab in the morning. You’ll need:
- 3 tablespoons jumbo gluten-free Mornflake oats
- 2 tablespoons Kaizen Living organic chia seeds
- 1 scoop PhD Woman vanilla protein powder
- 1 grated apple
- 1 tsp cinnamon
- Dash of vanilla extract
- 1 cup Alpro almond milk
- A few chopped Whitworths dates
This morning I topped with Punch Foods Cinnamon Spice superseeds, flaked almonds for the good fats and a few extra dates.
‘Caramel’ & Chocolate Chia Pudding
Something a little special – it tastes like a dessert – and great for using leftover cooked sweet potato. You’ll need:
For the chia pudding –
- 1 cup cooked sweet potato chunks (chilled)
- ½ frozen banana
- ½ cup the Coconut Company coconut milk
- 1 tablespoon tahini
- 1 teaspoon vanilla extract
- 1 teaspoon Kaizen Living maca powder
- ½ teaspoon cinnamon
- ¼ teaspoon ginger
- 1 tablespoon Beloved date nectar
- 2 tablespoons Kaizen Living chia seeds
Blend all ingredients except the chia seeds in a Nutri Ninja blender until thick and smooth. Add 2 tablespoons of water then blend again. Now mix in the chia seeds, stir well, then pour out into a kilner jar or container. Chill in the fridge for at least 30 minutes, or overnight.
For the chocolate sauce –
- 1 tablespoon maple syrup
- 1 tablespoon Kaizen Living cacao powder
- 1 tablespoon almond milk
- ½ teaspoon vanilla extract
Whisk together the ingredients to make sure there are no lumps. Pour over the chia pudding and either eat straight away or return to the fridge. Sprinkle over cacao nibs, buckwheat groats and flaked almonds (or whatever you want) and dig in!
Tropical Smoothie Bowl
Throw into a blender and boom, ready in 5 minutes or less. A taste of summer! You’ll need:
- 1 frozen banana
- 1 cup frozen pineapple
- A few chunks of mango
- 1 teaspoon turmeric powder
- 1/2 cup The Coconut Company coconut milk
Blend in a Nutri Ninja and top with pomegranate seeds, pumpkin seeds, bee pollen and Kaizen Living chia seeds.
Vibrant Pink Smoothie Bowl
Using my favourite RollaGranola as the ideal topping for a smoothie bowl, the beetroot adds incredible colour to this super easy breakfast – ready in 5 minutes! You’ll need:
- 1 frozen banana
- 1 sachet Cherry Active cherry concentrate
- 2 chunks cooked beetroot
- ½ cup frozen pineapple
- 2 tablespoons Frill Bursting Berries frozen smoothie
- 1 teaspoon Kaizen Living acai berry powder
- 100ml coconut water
Whizz up in a Nutri Ninja until thick and smooth. Pour into a bowl straight away. Top with RollaGranola, Kaizen Living cacao nibs and bee pollen.
